1 lb bacon chopped 1 onion chopped 2 cans cream of potato soup 2 cups cubed Velveeta cheese 1 quart half and half (whole or 2% milk works fine too, it just produces a thinner soup that's not quite as rich, but still delicious) 1 box 6 oz Uncle Ben’s Wild Rice, prepared as directed Ready Rice packets work in a pinch!
In a large Dutch oven or stock pot, cook bacon and onion together until browned. Drain well.
Add the cream of potato soup, Velveeta cheese, half and half, and prepared wild rice.
Cook on low, stirring often, until the cheese is fully melted and the soup is warmed through.
