Ingredients

  • 1 ½ cups extra long grain rice basmati, jasmine, etc.
  • 3 cups water
  • 1 ½ teaspoons salt
  • 3-4 tbsp fresh lime juice (or more if you want!)
  • ⅓ cup fresh cilantro chopped
  • 5 teaspoons oil divided

Instructions

  • In a medium pot, combine rice, water, 2 teaspoons of the oil, and salt. Bring to a boil over high heat.
  • When the water just skims the top of the rice, turn the heat down to low, cover, and cook for about 20 minutes. Turn off the heat and let it steam for 5 more minutes — lid on, no peeking!
  • In a medium bowl, combine chopped cilantro, fresh lime juice, the cooked rice, and the remaining oil. Toss gently until every grain is coated in herby, citrusy goodness.

Notes

Pro Tips

  • For extra lime flavor, zest one lime and mix it in with the juice.
  • Make it in a rice cooker or Instant Pot for an even easier version.
  • Swap vegetable oil for olive oil for a lighter taste.
  • Rinse rice before cooking for extra fluffy results.

Pairing Suggestions

  • Build your own burrito bowl with grilled chicken, beans, corn, and salsa.
