Ingredients
1poundbonelessskinless chicken breast, cut into bite-size pieces
2tablespoonsbutter
2teaspoonsCajun seasoningdivided
2teaspoonsminced garlicabout 2-3 cloves
2cupschicken broth
1 ½cupshalf and half
1teaspoonsalt
1teaspoonground black pepper
½teaspoongarlic powder
8ouncesuncooked fettuccine pasta
¾cupgrated Parmesan cheese
Instructions
Cook the chicken: Heat butter in a dutch oven or large pot over medium-high heat.Add your chicken pieces and 1 teaspoon of Cajun seasoning. Cook for about 5–7 minutes, stirring now and then, until the chicken is no longer pink and reaches an internal temp of 165°F. Stir in the minced garlic and cook for another minute until fragrant.
Build the sauce: Pour in the chicken broth, half and half, and the remaining Cajun seasoning. Add salt, black pepper, and garlic powder, then stir to combine. Add the uncooked pasta (break it in half if you’d like) and give everything a good stir so the noodles are covered.
Let it all cook together: Cover and bring to a boil, then remove the lid and reduce the heat to medium-low. Continue cooking for 10–12 minutes, stirring frequently so the pasta doesn’t clump. You’ll know it’s ready when the noodles are tender and most of the liquid has been absorbed — you want just a little saucy goodness left at the bottom.
Cheese, please: Remove from heat, stir in the grated Parmesan until melted and creamy, and that’s it! Serve it right away — no one likes waiting for Alfredo.
Notes
Pro Tips
Stir often while the pasta cooks — it helps prevent sticking and keeps the sauce smooth.
Sauce too thick? Just add a splash of chicken broth, milk or pasta water to loosen it up.
Want it extra spicy? Add a pinch more Cajun seasoning or a few red pepper flakes.
Don’t skip the Parmesan — it ties the whole dish together.
