Ultra Creamy Make-Ahead Mashed Potatoes

These Ultra Creamy Make-Ahead Mashed Potatoes are buttery, smooth, and totally stress-free! Bake the potatoes instead of boiling them for maximum flavor and the fluffiest texture. They can be made up to two days in advance and reheat beautifully — perfect for holidays, Sunday dinners, or any night when mashed potatoes are non-negotiable.

Equipment

Ingredients

  • 3½ pounds russet potatoes 6–8 medium
  • 2 cups heavy cream
  • 8 tablespoons unsalted butter divided
  • 1½ teaspoons salt
  • Chopped chives for serving (optional)

Instructions

  • Bake the potatoes: Preheat your oven to 450°F. Pierce each potato a few times with a fork and place them directly on the oven rack (or on a baking sheet). Bake until soft and tender — about 50 to 60 minutes.
  • Mash while hot: Once baked, cut each potato in half and scoop out the fluffy insides. (Use a towel or oven mitt — they’ll be hot!) Mash the potatoes right away with a masher or mixer until smooth and lump-free.
  • Add the creamy goodness: In a small saucepan, heat the cream with 6 tablespoons of butter until warm and melted. Gently fold this mixture into the potatoes until silky and smooth. Stir in salt and taste — adjust if needed.
  • Store for later: Transfer to a large microwave-safe bowl, cover with plastic wrap (make sure it doesn’t touch the potatoes), and refrigerate for up to 2 days.
  • Reheat and serve:
Microwave reheating option: poke a few holes in the plastic wrap and microwave at medium-high for about 14 minutes, stirring halfway through. Top with the remaining butter and sprinkle with chives before serving.
    Oven reheating option:
Warm covered potatoes in a 350°F oven for 30–40 minutes, stirring once midway through.

Notes

Pro Tips
  • Mash the potatoes while they’re still hot for the smoothest texture.
  • Overcooking the potatoes slightly is better than undercooking — they’ll mash easier.
  • For super smooth results, pass the potatoes through a ricer or food mill before mixing.
  • Don’t freeze mashed potatoes — the texture gets weird (trust me).

Pairing Suggestions
  • Turkey or roast beef: Classic holiday pairing.
  • Garlic butter green beans: Adds a little freshness.
  • Gravy (obviously): The ultimate comfort combo.
  • Leftovers: Top with shredded cheese and bake — hello, Twice Baked Potato Casserole.
