Crispy Baked Tacos

It’s been way too long since I’ve shared a taco recipe—honestly shocking for someone who considers “Taco Tuesday” more of a personality trait than a day of the week. But these Crispy Baked Tacos? I made them for dinner tonight and literally couldn’t wait to post them because they were THAT good. They’re crunchy, cheesy, melty, and dangerously easy. Basically everything a weeknight dinner should be.
Why You’ll Love Them
- Crispy tortilla outside. gooey, melty cheddar inside
- Easy to customize with all your favorite toppings
- Baked—not fried!—so cleanup is minimal
- Kid-approved, adult-approved, taco-lover-approved
Ingredients
- 1 lb lean ground beef (I use 93/7)
- 1 small onion, finely diced
- Single Batch of Homemade Taco Seasoning
- 12 small flour tortillas
- 3 cups shredded cheddar cheese
- Cooking spray (or 1–2 tbsp oil)
Optional Toppings
- Chopped tomato
- Chopped avocado
- Sour cream
- Shredded lettuce
- Salsa
- Anything else your taco-loving heart desires
Instructions
- Preheat your oven to 425°F and line a sheet pan with parchment paper.
- In a large skillet over medium heat, cook the ground beef and onion until the onion is softened and the beef is browned.
- Drain any excess fat, then stir in your taco seasoning. Remove from heat.
- Assemble the tacos: Evenly distribute the taco meat and cheese into each tortilla. Fold in half.
- Arrange the folded tacos on your prepared sheet pan and lightly spray or brush both sides with oil so they crisp up beautifully.
- Repeat with all tortillas.
- Bake for 8–10 minutes, flipping halfway through, until the tortillas are golden and crispy.
- Open them gently and load them up with your favorite toppings—lettuce, salsa, sour cream, tomatoes… all the good stuff.
- Serve immediately.
Pro Tips
- Cheese as glue: A little cheese on both sides of the filling helps the taco stay sealed and extra melty.
- Keep them crispy: Don’t overfill—overstuffed tacos tend to unfold and get soft.
- Corn vs. flour: Flour tortillas get crisp without cracking. If using corn, warm them before filling so they don’t tear.
- Double the sheet pan: If you’re feeding a larger crowd, bake two pans at once—just rotate halfway through for even crispiness.
Pairing Suggestions
- Chipotle Lime Rice – Because tacos feel lonely without it.
- Refried or Black Beans – Adds protein, fiber, and the illusion that we made a “balanced dinner.”
- Elote (Mexican Street Corn) – Sweet, spicy, cheesy — basically the extrovert friend every taco needs.
- Chips & Salsa or Guacamole – The pregame to the taco party. And the mid-game. And the after-party.
Favorite Tools Used
- Sheet Pan – for achieving the perfect crisp
- Large Skillet – your beef browning workhorse
- Tongs – for snagging and flipping tacos without breaking them
- Pastry Brush – if you prefer brushing on the oil instead of spraying
Final Thoughts
If you need a dinner win (or just an excuse to eat something crispy and cheesy), these Crispy Baked Tacos are it. They’re fast, fun, customizable, and officially joining my permanent weeknight rotation. And maybe… just maybe… I won’t wait this long to post my next taco recipe.
