12thick slices of your favorite melty cheesesI use a mix of Muenster, Cheddar, and Gruyere. Feel free to get creative — American, Swiss, or Provolone would all be delicious too!
1yellow onionsliced
1tspfresh thymeminced (optional)
2tspfresh rosemaryminced, divided (optional)
1tspbrown sugar

Instructions
Caramelize the onions: In a skillet, melt 1 tablespoon of butter with olive oil over medium-low heat. Add sliced onion, thyme, 1/2 teaspoon rosemary (if using), and a pinch of salt and pepper. Cook slowly, stirring often, until onions are soft and golden — about 10-15 minutes. Stir in the brown sugar and cook another minute. Transfer onions to a plate and set aside.
Prep the bread: Spread a thin layer of mayonnaise on one side of each bread slice. (Trust me, mayo makes for the crispiest, most golden crust.)
Build and toast: To the same skillet, melt the remaining butter with the rest of the rosemary over medium heat. Swirl to coat the bottom. If your pan is big enough, place four slices of bread mayo-side down. (If your pan can't handle 4 at a time, do two slices and then repeat with the other two.) Immediately add your sliced cheeses to each piece.
Add the magic: Evenly distribute the caramelized onions on top of the slices and add the bread tops, mayo side up. When the bottoms are perfectly golden, flip carefully.
Finish it off: Cook until bottom side is golden brown, the cheese is fully melted and the bread is crisped to perfection. Transfer to a plate, slice in half. Enjoy!
