If comfort food had a love language, this grilled cheese would be fluent. We’re talking layers of gooey melty cheese wrapped in buttery, golden bread and filled with sweet caramelized onions that’ll make you question every plain grilled cheese you’ve ever had.

I made this while testing recipes for the blog, and after the first bite, I just sat there in silence — mostly because my mouth was full, but also because this sandwich is that good.

Ingredients

  • 8 slices good-quality bread (I used thick-cut Sourdough, but any artisan bread will do)
  • Mayonnaise, for spreading
  • 12 thick slices of your favorite melty cheeses (I use a mix of Muenster, Cheddar, and Gruyere). Feel free to get creative — American, Swiss, or Provolone would all be delicious too!
  • 1 yellow onions, thinly sliced
  • 1/2 tsp fresh thyme, minced (optional)
  • 1 tsp fresh rosemary, minced, divided (optional)
  • 1 tsp brown sugar
  • Salt and pepper, to taste
  • 2 Tbsp butter, divided
  • 1 Tbsp olive oil

Instructions

  1. Caramelize the onions:
    In a skillet, melt 1 tablespoon of butter with olive oil over medium-low heat. Add the sliced onion, thyme, 1/2 teaspoon rosemary (if using), and a pinch of salt and pepper. Cook slowly, stirring often, until onions are soft and golden — about 10 minutes. Stir in the brown sugar and cook another minute. Transfer onions to a plate and set aside.
  2. Prep the bread:
    Spread a thin layer of mayonnaise on one side of each bread slice. (Trust me, mayo makes for the crispiest, most golden crust.)
  3. Build and toast:
    To the same skillet, melt the remaining butter with the rest of the rosemary over medium heat. Swirl to coat the bottom. If your pan is big enough, place four slices of bread mayo-side down. (If your pan can’t handle 4 at a time, do two slices and then repeat with the other two.) Immediately add your sliced cheeses to each piece.
  4. Add the magic:
    Evenly distribute the caramelized onions on top of the slices and add the bread tops, mayo side up. When the bottoms are perfectly golden, flip carefully.
  5. Finish it off:
    Cook until bottom side is golden brown, the cheese is fully melted and the bread is crisped to perfection. Transfer to a plate, slice in half. Enjoy!
