Why You’ll Love Them

  • Make-Ahead Friendly: Prep a big batch and freeze — perfect for mornings when the snooze button wins.
  • Customizable: Swap one of the fillings for chopped peppers, spinach, or whatever your breakfast mood is craving!
  • Want a lighter version? Try low-carb tortillas, swap sausage for turkey, skip the bacon, and load up on veggies. There are so many ways to cut carbs without cutting flavor!
  • Family Friendly: Everyone can grab one, heat it up, and start the day happy.
  • Budget & Time Saver: Potatoes, eggs, and tortillas keep this affordable and filling.

Ingredients

  • 1 lb bacon
  • 1 lb breakfast sausage
  • 1 cup chopped ham
  • 1 package refrigerated diced potatoes with onions (like Simply Potatoes), or dice about 1½ lbs of fresh potatoes yourself — whichever you prefer!
  • 16 oz cheese any kind will do
  • 20 medium sized flour tortillas
  • 18 eggs extra large
  • 1/2 cup milk
  • 1/3 cup olive oil
  • Salt and pepper, to taste

Instructions

1. Prepare Fillings

  • Bake bacon until crispy, brown sausage, and fry ham. Set aside.
  • Cook the potatoes according to the package instructions—no need to dirty extra dishes, I like to use the same skillet I browned the meat in.

2. Scramble Eggs

  • Whisk 18 eggs with 1/2 cup milk.
  • Heat 1 Tbsp butter in a large skillet over medium.
  • Add eggs, cook while stirring occasionally until set. Season with salt and pepper.

3. Heat Tortillas

  • Stack 5–10 tortillas on a plate, cover with a damp paper towel.
  • Microwave at 50% power for 30 seconds. Repeat with remaining tortillas.

4. Assemble Burritos

  • Set up an assembly line: cheese, eggs, potatoes, meat.
  • Place fillings in the center of each tortilla, fold sides, and roll tightly with seam down.

5. Freeze Burritos

  • Place burritos on a parchment-lined baking sheet, seam-side down, press lightly.
  • Flash-freeze 1 hour.
  • Wrap individually in plastic wrap, then store in a freezer bag (makes ~20).

6. Reheat & Serve

  • Unwrap, wrap in a damp paper towel, and microwave 3 minutes at 50% power. (The amount of time and power level will depend on your microwave, but these are good settings to start with.)
  • Serve with fresh salsa or hot sauce and enjoy!

Pro Tips

  • Mix & Match Fillings: Bacon, sausage, ham, peppers, spinach, onions, etc.)
  • Cheese Choices: Cheddar, pepper jack, or a Mexican blend all work great.
  • Potatoes Shortcut: Pre-diced potatoes save time and make assembly faster.
  • Freezing Tip: Flash-freezing keeps the burritos from sticking together in the bag.

Pairing Suggestions

  • Sauces & Salsas: Fresh tomato salsa, avocado crema, or even a little hot sauce.
  • Sides: Fresh fruit, yogurt, or a smoothie for a complete breakfast.
  • Drinks: Coffee, iced latte, or a morning mimosa for special occasions.
